If you’re pressed for time but still want a hearty, homemade meal, there’s nothing more satisfying than an omelet. This is the most basic dish for beginner cooks, and even children can make it. Make a healthy and hearty omelet using carrots, tomatoes, curry leaves, and other ingredients found in every kitchen in Kerala. Here is the recipe:

1/4 cup oats (powder)
4 tablespoons water
salt (optional)
2 eggs
1 carrot shredded
1/2 mackerel (diced)
1/2 tomato (diced)
2 green chilies (cut into small, thin rounds)
Curry leaves (optional)
1 small piece of ginger (chopped)
1/2 teaspoon pepper (ground to a fine powder)
1/4 teaspoon turmeric powder
1/2 teaspoon chili flakes
1 tablespoon coconut oil
preparation
Add 4 tablespoons of water to the oat powder and mix well.
Add the beaten eggs and all other ingredients and mix well.
Heat 1 tablespoon of oil in a frying pan. Add the above egg mixture to it, cover and simmer in the same way.
Once one side of the omelet is cooked, flip it over and cook the other side in the same way.
After a while, transfer the omelet to a plate and serve hot.
