Vijayshree N, Director and Chief Nutritionist, MGM Healthcare, said that although they are called ‘nuts’, they actually fall under the category of vegetables, specifically water vegetables. “In terms of nutritional value, 100 grams of water cashew nuts contains about 27 grams of carbohydrates. It does not contain much protein, but it is rich in vitamin C and calcium, and potassium It is also very rich at around 500 mg per 100 grams, and has anti-inflammatory and antioxidant properties,” she said.

They are low in calories but high in essential nutrients such as vitamin B6, potassium and manganese, which support metabolic and immune function, says CV Aishwarya, clinical nutritionist and lecturer at the Sri Ramachandra Institute of Higher Education and Research in Chennai.
