• For a crunchier result, pat the crushed broccoli with a paper towel or clean cloth to remove excess moisture. The drier the broccoli, the crispier and chewier the effect.
• If you sprinkle Parmesan liberally all over the dish, it will inevitably fall onto the baking sheet, but this is okay and recommended. The cheese melts and solidifies, giving it a texture similar to chips and clinging to the broccoli, whetting your appetite.
• For safety reasons, we recommend using a plastic glass or ceramic mug to crush the broccoli. If you press too hard with a glass cup, it may break.

- • 8 cups medium to large broccoli florets
- • 1/2 cup grated Parmesan cheese, or more if desired
Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
To blanch broccoli, add the florets to boiling water and cook for just 5 minutes, until tender (more than 5 minutes will cause them to become too tender). Place in a colander to cool and dry.
Arrange the broccoli florets in a single layer on a lined baking sheet. Use a plastic cup (not glass!) to break each one up to make it as flat as possible. Layer paper towels or a clean kitchen cloth and press down on each floret to remove as much water as possible.
Spray the surface with oil spray and sprinkle generously with grated parm. Some will fall onto the cookie sheet and crisp up even more in the oven. that’s delicious! Sprinkle with kosher salt, light garlic powder, and optional ground black pepper, if desired.
Place in the oven for 20-25 minutes. You want the broccoli and parm to be slightly charred and crispy.
