Le Basquean upscale vegan restaurant that fuses the flavors of French and Spanish cuisine into a unique dining experience, has opened in Union Square. The restaurant was founded by vegan entrepreneur chef Guy Vaknin, who has created a carefully selected menu that incorporates flavors from both countries.
Vaknin is best known for starting City Roots Hospitality, a company with a mission to shape the way people eat. Le Basque is just the latest of many kosher vegan restaurants he has launched. Beyond sushi, willow, Coretta, Anishiand Centilall located in Manhattan. Vaknin also appeared on Season 10 of Hell’s Kitchen and Shark Tank in 2018.
Le Basque combines the bold, earthy flavors of Spanish tapas with the elegance of French gastronomy. Guests will experience the richness of these cuisines while witnessing the versatility and creativity that can come from plant-based cuisine.
The menu includes Grilled Chunk Foods Steak, Sea Salt, Mojo Kalamata Sauce, Beluga Lentils, Garlic Confit, and Roasted Heirloom Tomatoes. All meat items are actually plant-based, but closely imitate the real thing.
Other dishes include appetizers like fo gras, escargot, and salmorejo, as well as blue oyster mushroom steak with lemon orzo, asparagus, red wine gastrique, and green onions.

La Basque’s bar serves French and Spanish kosher wines and some creative cocktails. The restaurant offers an intimate atmosphere perfect for romantic dinners or special gatherings, with plush velvet banquettes and solawood flowers by Little Miss Delilah, and a mezzanine level under a skylight.
Le Basque is open Sunday to Thursday from 4.30pm to 10.30pm, Friday from 11.30pm, Saturday from 11.30am to 11.30pm, and Sunday from 11.30am. Until 10:30 p.m. 15 West Union Square. The restaurant is certified Kosher by the IKC.
