During the summer, my husband and I try to take our dog for a walk every night after dinner — unless it’s too hot or stormy — so we can all make the most of a long day. The walk gives us a chance to talk about the day’s events and gives Chloe one last chance to stretch her legs and do a little exploring before bed. So this week is all about easy cleanup — who wants to spend time doing dishes when you can just go for a walk after dinner? All of these meals are packed with at least 15 grams of protein per serving (you need energy for a walk), and they’re all made on a baking sheet (or two), so dinner cleanup is quick and you can be on the road before the sun goes down.

Roasted Salmon Caprese
This recipe combines the popular Caprese salad with roasted salmon. Salmon is one of the healthiest types of fish you can eat. Not only is it a great source of protein, but salmon is rich in omega-3 fatty acids, which help reduce inflammation. Topping salmon with mozzarella may seem a little unusual, but the combination really works, especially when you savor the roasted tomatoes and balsamic reduction in every bite. To complete the meal, serve with a side of whole grains, such as barley, that you’ve prepared in advance.
Sheet Pan Poblano and Corn Chicken Fajitas
The ingredients for this fajita – chicken, corn, poblano peppers, and onions – are cooked together on the grill. All ingredients except the corn are first tossed in a spice mix to add a little kick and flavor. When ready, everything is plated into tortillas with sliced avocado, sour cream, and fresh cilantro. The fresh corn kernels add a summery vibe and plenty of fiber to the dish.
Sheet Pan Eggs with Tomatoes and Pesto
How about having breakfast for dinner? I love how easy it is to whip up a sheet pan egg dish by the time Wednesday rolls around. This version is perfect for summer, loaded with tomatoes, pesto, and mozzarella (and recreates a Caprese salad!). Chicken sausage provides a satisfying protein boost, but you could also use a vegetarian sausage if you prefer. I serve mine with a basic green salad tossed in vinaigrette. Any leftovers will keep in the fridge for up to 3 days, making it an easy high-protein breakfast to whip up.
Roasted chickpeas and cauliflower in pita bread with sun-dried tomato sauce
Now, you will need a food processor to make the sun-dried tomato sauce, but you can make the sauce and clear out the bowl of the food processor before roasting the chickpeas and cauliflower. One bite of the spiced roasted chickpea and cauliflower pita and you’ll agree that a little multitasking is worth it. To save yourself the trouble and the pan, buy pre-cooked pickled onions or just leave them out.
Sheet Pan Sausage & Peppers
Celebrate the end of the week with a colorful dinner on Friday night. Assorted red, orange and yellow bell peppers provide this meal with plenty of Vitamin C, and thinly sliced fennel adds both fiber and potassium. The chicken sausage is pre-cooked, so you can roast the veggies in the oven first and then add the sausage and crushed garlic once they’re tender. I like to serve the sausage and veggies wrapped in a whole-grain hoagie or sub roll, topped with a generous amount of shaved Parmesan and fresh basil.
