She replaced sugar and processed foods with healthier options
Huber also overhauled his diet, reducing or eliminating soft drinks, chocolate, processed foods, bread, and carbohydrates. “I cut out all added sugar. I don’t eat sweets like cookies or cake unless it’s a special occasion,” she says.
But she loves baking. “My mother taught me that food is love, so I always make bread for others,” she says. She has earned first place ribbons multiple times for cakes and cupcakes, and took fourth place in the entire state at the Pennsylvania Farm Show. “I rarely bake anything myself anymore because I know I’ll eat it if I have it at home,” she says.
She restricted her calories to 1,200 calories a day and over time began intermittent fasting. She typically skips breakfast, eats tuna and crackers for lunch, and has some type of protein and vegetables for dinner. “I cook almost every meal. If I’m going to get takeout, it’s a salad,” she says.
She didn’t think it would be difficult to cut so many calories from her diet. “Before I started, I fasted for a month. It was during Lent. It prepared my body,” she says. “And it’s not hard to do if you’re getting protein and fiber to keep you full.”
A family health emergency triggered the setback.
Huber married in 2021 and is a stepmom to Charlie, now 21, and Zoe, now 18. In late 2022, the family faced serious health problems. My husband had a heart attack and needed triple bypass surgery.
“I stopped focusing on myself because I had to focus on him and our family. I just got exhausted. I stopped making time for myself and… I also stopped exercising,” she says. “When I was working, I got comfort food. It was nothing for me to go to Burger King on my lunch break or go to the store and buy cookies. It was a big deal for me. I was so stressed that I fell back into old habits, and because I wasn’t exercising, I had no outlet for it. I lost about 65 pounds.”
In April 2024, things changed for her. “There was a nurse I work with, and we were talking about my husband. She looked me in the eye and said, ‘Becky, how are you doing?’you Are you doing it? I didn’t really know how to answer her question. I was caught off guard. I didn’t have time to think about how I was feeling,” she says.
Now, she’s back to a place where she puts herself first again. “I realized that in order to take care of others, I had to take care of myself,” she says. She went back to walking, working out, and making healthy food choices.
