15+ High-Fiber Vegetarian Dinners To Make Forever

Whether you’re following a vegetarian diet or simply want to eat more vegetables, these highly-rated dishes are worth giving a try. These dishes are also high in fiber, with at least 6 grams per serving. Eating a fiber-rich diet has a variety of health benefits, including reducing the risk of heart disease and diabetes and supporting healthy digestion. Options like Braised Lentils and Kale with Fried Egg and Eggplant Rollatini are great veggie-packed mains to try tonight.

This healthy casserole is easy to make and perfect for a weeknight dinner. Don’t overcook the pasta, as it will become mushy. And don’t forget to drizzle on the balsamic vinegar at the end for a vibrant finish.

These braised lentils are tossed in fire-roasted tomato soup with tender kale and topped with an egg for a protein-packed kick. Microwaveable lentils only require a short cooking time in a skillet. If you have pre-cooked or canned lentils on hand, you can use them instead, but you may need to reduce the cooking time by a few minutes to keep them from becoming too soft. We love the soft, runny yolk that coats the dish. If you’d like a firmer yolk, cover the pan and cook for 2-3 minutes longer.

Beets may have an earthy taste, but this root veggie has the highest natural sugar content of any vegetable, and roasting it intensifies its sweetness. This jewel-toned Caprese substitutes beets for tomatoes, orange, and tangy arugula and radicchio for basil, with toasted breadcrumbs scattered on top for extra crunch.

These tender eggplant rolls latini melt in your mouth. Baking the eggplant twice makes it softer when you roll it up. If you have leftover eggplant, chop it finely and saute it in oil with a little garlic and combine it with wilted dark leafy greens like spinach or kale for an easy side dish. Serve with some toasted whole wheat bread to complete the meal.
