Kayla Sandoval bakes with flours and starches such as oats, sorghum, white rice, brown rice, tapioca, and potatoes. She named her new bakery and cafe in Fairport Village “Alter Ego Eatery.” Her breads and baked goods are gluten-free, but she can pass for conventional products made with wheat.
In other words, you can enjoy them whether you are on a special diet or not. “I don’t know the difference,” she said.
Sandoval also makes it a priority to welcome people with all kinds of dietary restrictions, including vegans, vegetarians, and those with allergies. “It doesn’t matter if you’re on a special diet or not,” she said. “You should be able to eat anything.”
Alter Ego Eatery offers an interesting and varied selection of baked goods, as well as an international breakfast and lunch menu.
Several dishes are inspired by Sandoval’s time living in Spain. For breakfast, a traditional Spanish potato omelet is prepared with potatoes and onions fried in olive oil and baked in custard. The “Snackie Plate” served at lunchtime is the classic pan con tomate. Brush the baguette with garlic and olive oil and top with crushed fresh tomatoes. Serve with prosciutto or manchego cheese, or if you don’t eat meat, add salad or fruit.
Other breakfast dishes: classic sausage, egg and cheese breakfast sandwiches, and a different quiche each week. French toast is buckwheat bread topped with maple apple and berry compote. Flavorful vegan oatmeal topped with charred seasonal vegetables and chili crisps.
From 11 a.m. to 3 p.m., they’ll be serving sumptuous toasts as well as Mediterranean-inspired fougasse snack plates with homemade hummus, baba ghanouj, za’atar, olives and charred lemon wedges.
And there are sweets too. The selection varies, but includes cookies, muffins, Basque cheesecake, and tiramisu. Available anytime. A rich, decadent brownie topped with ganache and free of the top 14 allergens. Sandoval always keeps a full-sized version on hand so he can take it to parties.
Alter Ego Eatery offers a full menu of coffee, espresso and tea beverages, as well as a variety of breads, scones and baked goods. We also have a wide selection of gluten-free foods.
Calabresella’s former home has been completely renovated, creating an inviting atmosphere with pastel colors and seating for 12 indoors and about 20 on the outdoor patio.
Designed with an emphasis on flavor
Sandoval, an engineer by trade, tends to tinker. She initially began experimenting with baking gluten-free products for her husband, who has celiac disease.
That led to Biscotti Brewers, which she launched in 2021 out of The Commissary, a food business incubator in Sibley Square. She sold her gluten-free biscotti, cookies, breads, and more at local farmers markets and events.
All the while, she kept reworking the recipe and finding ways to improve the taste and texture. Even recently, she has refined her scone recipe to make it lighter and flakier.
She said her business is still a work in progress, keeping the name Biscotti Brewers. As a result, Sandoval is asking visitors to “kindly walk in the door” in the early weeks until her eatery gets off the ground.

Alter Ego Eatery is located at 146 N. Main St. in Fairport, next to the Quicklee gas station. There’s no sign yet, but the bright yellow patio furniture is a landmark. This space is wheelchair accessible.
Business hours are Wednesday through Friday from 8 AM to 3 PM, Saturday from 8:30 AM to 4 PM, and Sunday from 8:30 AM to 3 PM. Breakfast is served until 11am, and the lunch menu is served until closing. We do not use any distribution apps.
