These satisfying beans are inspired by cacio e pepe (cheese and pepper) pasta, a classic Roman dish in which black pepper and pecorino cheese are mixed with pasta water to create a creamy, punchy sauce. That's what I got. Here, the creaminess of beans replaces pasta and escarole becomes a meal. Escarole is milder than other winter vegetables such as kale and collards, with a crunchy, hearty texture and sweet flavor that makes it delicious in this dish, but feel free to substitute it with another winter vegetable of your choice. Please try it.
